With the 2020 Ekka being cancelled due to COVID-19, Jubilee Community Care has decided to bring the Ekka to you!
This year Jubilee will be giving each client a Jubilee Ekka bag full of treats – think Bertie Beetle chocolates and other delights! The bags will be delivered to your home during August so keep an eye out when your support worker visits.
Did you know it is just the third time in its 143-year history that the Ekka has not proceeded. It was previously cancelled in 1919 due to the Spanish Flu epidemic and in 1942 when the grounds were used as a World War II staging depot.
The RNA has a strong history of using the Brisbane Showgrounds to help the community in times of need, including being used as a treatment centre in 1918 for those suffering from Spanish Influenza. More recently it also was used as an evacuation centre for those impacted by the 2011 Brisbane floods.
Most of the Ekka competitions have been cancelled however the beef cattle led steer competition will go ahead in Gympie on August 5 while judging for the prime beef competition will be held on August 6 at Silverdale. Other competitions still running include bush poetry and digital photography.
Of course it would not be Ekka time without the iconic strawberry sundae. In 2019 more than 180,000 sundaes were sold. While you can’t get your hands on one this year try out these strawberry sundae-inspired cupcakes. They come courtesy of www.ekka.com.au/blog. Enjoy.
- 225g salted butter
- 1 cup white sugar
- 1 tsp grated lime or lemon
- 60ml milk
- 200g self-raising flour
- 10ml vanilla extract
- 4 large room temperature free range eggs
Beat the sugar and butter with the whisk attachment until light and fluffy. The sugar must be dissolved right through.
Put the mixer on low and add the self-raising flour, eggs, vanilla and zest. Mix well to form a smooth batter before pouring into a greased cupcake tin or cupcake papers.
Bake for about 15-18 minutes at 170c until brown and until a skewer comes out clean from the middle. Once cooked, remove from the oven and cool!
Once cooled pipe the cupcakes with whipped cream, some sliced strawberries and white chocolate curls or bark.
